Breakthrough.

I found myself crying on my way home from work this afternoon for lunch. Crying, for the first time in a Very long time, not out of saddness, but out of pure happiness. This sounds cliche but I’m writing to remind myself - there was a country song on, “I thank God for unanswered prayers.” Oh, how many times this entire past year, two years, three years have I prayed and wished so SO SO many things that just never came to fruition. I was angry for a long time, I was upset and thought that God had forgotten about me.

Today, on my way home, I thought about my life and could not find one thing that would make me Happier than I already am. I am at such a good place in my life. And so I write today to say thank you, God, for unanswered prayers.

arugula salad

makes one giant bowl-ful

1 large mango, cubed
1 avocado, diced
3/4 cup macadamia nuts, roasted/salted
5 cups fresh arugula

optional add-in’s: sweet onions, diced apple, diced pineapple … more

dressing (or use your own recipe):
1/4 cup lemon juice
2 tbsp apple cider vinegar
1/4 cup olive oil
1 tbsp dijon mustard
1 tsp agave syrup
pepper
dash garlic powder

directions:

1. i made a quickie salad dressing out of a few of my favorite flavors. whisked it together and tossed it with the salad ingredients - except the arugula!

2. i tossed the avocado, mango and nuts with the salad dressing - then poured it right over the greens. i didn’t toss the salad together until we were ready to serve the salad. otherwise the arugula would get quite soggy.

3. top with fresh black pepper! serve!

never ever use garlic powder, ever. otherwise this looks deeeeelish.

Costa Rica!

I haven’t been on Tumblr in awhile ~~~ TOO much going on at work - and now working out again! I can’t tell you how great I feel when I’m on a regular workout schedule. SO Why is it so hard to motivate to work out? Quite the question…..But I thought I’d share how excited I am for OFF season (Crested Butte thing) and going to Costa Rica with my man! <3 Hoping to take TONS of photos and write a lot while I’m there ~ all great things to add to my page when I return :) Yay for Costa! Time off <3 my MAN <3.

Doesn’t even begin to show the simple beauty of this wonderful POW morning. But I had to post as it’s the only photo I have - taken right outside my office. Love these mornings - ExcitEMENT is in the air and people are genuinely “happy”.



Reminding myself to take deep breaths this morning. Reminding myself to be thankful for what I have in my life.
